Product overview

What is sucralose and why manufacturers use it

Sucralose is a chlorinated sucrose derivative designed to deliver very high sweetness without calories. Because it is stable under heat and across a wide pH range, it is a workhorse sweetener for many zero- and low-calorie foods and beverages.

Key characteristics

  • Intense sweetness: approximately 600 times sweeter than sucrose, allowing very low dosage levels.
  • Clean taste profile: sugar-like sweetness with minimal bitterness compared to many other high-intensity sweeteners.
  • High stability: excellent stability in dry form and good stability in most beverage and dairy systems.
  • Broad pH tolerance: suitable for soft drinks, juices and other acidic products.
  • Synergistic in blends: often combined with acesulfame K, aspartame or polyols to optimise flavour and cost-in-use.

Typical specifications (indicative)

Detailed specifications can be adapted to your internal standards and target markets. Typical commercial grades include:

  • Assay: sucralose content complying with major pharmacopeia / food additive monographs.
  • Appearance: white to off-white, crystalline powder or granular.
  • Solubility: freely soluble in water; suitable for syrups and concentrates.
  • Mesh size options tailored for beverage premixes, tablets or tabletop sweeteners.
  • Microbiological and impurity limits aligned with food and beverage use.

Atlas will align final specifications, COA parameters and analytical methods with your quality requirements and documentation format.

Applications

Where sucralose is used in food, beverage & nutrition

Sucralose is flexible across many categories, from soft drinks and flavoured waters to bakery, confectionery and nutrition products. It is rarely used alone; most recipes combine it with other sweeteners or bulk ingredients to deliver optimal taste and mouthfeel.

Beverages & liquid applications

  • Carbonated soft drinks, energy drinks and flavoured waters where clear, stable sweetness is essential.
  • Juice drinks and nectars to partially replace sugar and manage calorie content.
  • Liquid concentrates and syrups for fountain systems or home dilution.
  • Ready-to-drink teas and coffees where sucralose provides a clean profile at low dosage.

Dairy & plant-based products

  • Flavoured milk and drinking yogurts aiming for reduced sugar content.
  • UHT beverages where heat stability is important.
  • Plant-based drinks (soy, oat, almond) to enhance flavour without increasing calories.

Bakery, confectionery & tabletop

  • Tabletop sweeteners (powders, tablets, sachets) often in combination with polyols.
  • Sugar-reduced baked goods where sucralose provides sweetness while bulk is supplied by maltodextrin or polyols.
  • Chewing gum and confectionery as part of multi-sweetener systems.

Formulation considerations

  • Develop with sweetener blends (e.g. sucralose + acesulfame K or sucralose + polyols) to improve overall taste.
  • Adjust acidulant system in beverages to support desired flavour profile and shelf life.
  • Coordinate with bulking agents (erythritol, maltodextrin, polydextrose) where physical bulk is needed.
